INSPIRE 3EL3 C01 - More Than Food: Food as a Pedagogical Tool
Offering: Intersession 2025
Positioning food as an interdisciplinary field, students will explore how food can be a powerful vehicle for acquiring diverse skills and insights. They will engage in conversations with hospitality industry leaders—chefs, dietitians, and sustainability experts—who bring forward their unique perspectives on the deeper meaning food holds. These professionals will guide students through topics such as cultural connections, the value of food literacy, sustainable practices, and how food choices impact both individual wellness and global ecosystems.
Reflections, program analysis and group work will help students delve into the complex relationship between food and society, including the issues of food waste and the future of nutrition. They will gain practical knowledge that is not only applicable to the food industry but also transferable to broader fields such as sustainability, public health, and social justice. The course serves as a reminder that food can be a profound teacher, offering lessons about our values, habits, and connections to the world around us.
